V-Lean Deviled Eggs

Sticking to a calorie-conscious diet during the summer can feel very challenging, especially if you are a southern girl, born and raised like me. Fried chicken, cornbread, grilled burgers, and potato salad are just a few of my southern vices often served at the Fourth of July picnics and cookouts.  But of all of the southern favorites, deviled eggs have always been my favorite! 

Deviled eggs SCREAM summer to me….I could eat them with every meal!  Growing up in the south, especially during summer holidays, it was extremely rare that these yummy little devils were not served.  Lucky for me (and you) that eggs are such a diet-friendly food!  

Eggs can help you lose weight because of their high protein content, which keeps you full longer. That protein may also slightly increase your metabolism, which can help you burn more calories. 

So whether you need a super easy recipe to satiate your summer holiday cravings at the family cookout, or a quick and delicious snack to keep in the fridge, this deviled egg recipe will help you stay the course this summer with your weight loss goals!

Deviled Eggs

Eggs are a low-calorie food rich in protein and other nutrients. Eating eggs may supports weight loss, especially when incorporated into a calorie-conscious diet. Eggs boost metabolic activity and increase feelings of fullness, making these yummy devils the perfect party app or side dish for all the summertime cookouts.

To “Boil” Eggs:

  • Place trivet in the bottom of your Instant Pot
  • Pour water into pot
  • Gently add eggs on top of trivet without touching the sides of the pot
  • Place and tighten lid
  • Press the “Pressure Cook” button and adjust time to 4-8 minutes (4 minutes for a runny yolk, 6 minutes for soft, and 8 minutes for hard)
  • Press the “keep warm” button so that the light turns off, indicating the keep warm setting is turned off
  • Once the cooktime is complete, manually release pressure and remove eggs as soon as you are able to open lid
  • Place eggs in a bowl of ice water for 2 minutes and peel immediately

To Make Deviled Eggs

  • Halve Eggs
  • Using a spoon, gently scoop out cooked yolk and place in Food Processor
  • Add mayo, mustard, apple cider vinegar, salt and pepper
  • Blend ingredients in Food Processor until smooth
  • Fill piping bag with yolk mixture
  • Gently and evenly pipe yolk mixture in each egg white
  • Sprinkle each egg with Sriracha sessoning or paprika
  • Store in refrigerator for up to 3 days and serve chilled


  • Deviled eggs don’t have to be fancy.  You can skip the food processor and use a large mixing bowl with a potato masher to make the filling, and skip the piping bag and spoon the mixture directly in the eggs.  It may not look gourmet, but they will taste the same regardless of how they are assembled!
