Ingredients
For the Crust
- 1 cup Almond Flour
- 1 tsp Pumpkin Pie Spice
- 1 dash Pink Himalayan Sea Salt
- 3 tbsp Butter Kerry Gold Irish Butter is my preferred butter
- 1 ½ tbsp Swerve Granulated Sweetener
For the Filling
- 16 ounces Softened Cream Cheese
- ½ cup Sour Cream
- ½ cup Swerve Granulated Sweetener
- 1 tsp Vanilla Extract
- 1 Egg
Instructions
For the Crust
- Preheat oven to 375F
- In a medium mixing bowl, mix all ingredients until you have a dough consistency
- Press the crust into an 8 inch springform pan
- Bake for 8 minutes, or until golden brown
- Remove from oven and allow to cool while you prepare the filling
For the Filling
- In a large glass mixing bowl, heat cream cheese in the microwave for 30 seconds at the time until softened, mixing in-between each time (Be careful not to over heat. You should not need to heat more than 2 minutes total to soften).
- Add remaining ingredients and blend with a hand or stand mixer until smooth, ensuring all lumps are mixed thoroughly
Preparing to Bake
- Once the crust is cooled, lay 2 large pieces of aluminum foil in an "t" shape on the counter
- Place springform pan ini the center and wrap the aluminum foil up the sides of the pan to provide a barrier from the boiling water
- Pour filling mixture over the crust
- Place springform pan in the baking dish
- Place the baking dish in the oven with the rack in the extended position
- Carefully pour boiling water into the baking dish so that it surrounds the springform pan
- Gently push the oven rack back in, preventing the water from sloshing in the pan
- Bake for 30-35 minutes, or until the center of the cheesecake is not jiggling
- Remove from oven and allow to cool to touch
- Refrigerate for at least 4 hours
- Slice into 10 pieces and serve topped with your favorite sliced fruit or Reddi Wip non-dairy, almond milk whipped cream
