For the Crust

  • Preheat oven to 375F
  • In a medium mixing bowl, mix all ingredients until you have a dough consistency
  • Press the crust into an 8 inch springform pan
  • Bake for 8 minutes, or until golden brown
  • Remove from oven and allow to cool while you prepare the filling

For the Filling

  • In a large glass mixing bowl, heat cream cheese in the microwave for 30 seconds at the time until softened, mixing in-between each time (Be careful not to over heat. You should not need to heat more than 2 minutes total to soften).
  • Add remaining ingredients and blend with a hand or stand mixer until smooth, ensuring all lumps are mixed thoroughly

Preparing to Bake

  • Once the crust is cooled, lay 2 large pieces of aluminum foil in an "t" shape on the counter
  • Place springform pan ini the center and wrap the aluminum foil up the sides of the pan to provide a barrier from the boiling water
  • Pour filling mixture over the crust
  • Place springform pan in the baking dish
  • Place the baking dish in the oven with the rack in the extended position
  • Carefully pour boiling water into the baking dish so that it surrounds the springform pan
  • Gently push the oven rack back in, preventing the water from sloshing in the pan
  • Bake for 30-35 minutes, or until the center of the cheesecake is not jiggling
  • Remove from oven and allow to cool to touch
  • Refrigerate for at least 4 hours
  • Slice into 10 pieces and serve topped with your favorite sliced fruit or Reddi Wip non-dairy, almond milk whipped cream
